Walikum salam,
You can wear an Ihram anytime before reaching Miqat. But it will be convenient for you to wear an Ihram at Istanbul airport and then make Niyat on the plane when they announce the Miqat. You can also wear Ihram on the plane, but the plane toilet will be small and when a lot of people use the toilet at once, you can miss the Miqat point.
